This recipe is very general. You can add or omit certain items. It is really based on your personal preferences, and what you enjoy. Experiment and have fun with it.

-1 pack of cooked ham
-1 pack of cooked bacon
-1 clove garlic (or more, depending on preference)
- Chopped Mushrooms
-Whole Cream (can add as much or as little as you want)
-Shredded Blue Cheese and Cheddar Cheese
-Approx. 2 cups cooked pasta

Place ham, bacon, and mushrooms in pan; Sautee lightly until warm, and then pour in whole cream to the sauteed meat and mushrooms. Place lid on pan and let mixture simmer until it thickens into a sauce. (Be sure to stir every once in a while so sauce does not burn)
After sauce thickens, toss in cooked pasta and shredded cheeses. Mix, and eat!

Black Bean Hummus
Makes 4 servings
Preparation Time:5 Minutes

This hummus is not your typical hummus...in fact is even better. Try it, and you'll be pleasantly surprised! The hummus is especially good on warmed pita bread or chips. You can even eat it with whatever additional condiments your heart desires.

Ingredients:
-1 clove garlic
-1 (15 ounce) can black beans; drain and reserve liquid
-2 tablespoons lemon juice
-1 1/2 tablespoons tahini (tahini is sesame paste. If you cannot find sesame paste, you can subsutute with same amount of smooth peanut butter)
-3/4 teaspoon ground cumin
-1/2 teaspoon salt
-1/4 teaspoon cayenne pepper
-1/4 teaspoon paprika
-10 Greek olives

Directions: Mince garlic in the bowl of a food processor. Add black beans, 2 tablespoons reserved liquid, 2 tablespoons lemon juice, tahini, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper; process until smooth, scraping down the sides as needed. Add additional seasoning and liquid to taste. Garnish with paprika and Greek olives.

Quick, Easy, "Cheater" Pierogies
Courtesy of: Agnieszka
Makes 12 servings

Fun and easy alternative to the old-fashioned, labor intensive pierogie. Very delicious and quick. Taste of traditional pierogie without spending the whole day in the kitchen! Of course, traditional recipe is best, but this is also very good. But this is NOT a lowfat meal, so only eat this occassionally. **Normally, I only make half of this recipe, because 12 servings are too many for only me and room mate.**

Ingredients:
-4 onions, chopped
-4 tablespoons butter
-1 (16 ounce) package lasagna noodles
-16 ounces shredded Cheddar cheese
-4 cups instant mashed potato flakes
-1/4 cup butter
(I also add chopped carrots, some dill herb and garlic powder to taste, but this is optional, and based on personal preferences.)

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9x13 inch baking dish.
2. Saute onions in the butter until translucent and soft.
3. Cook and drain lasagna following package directions.
4. Make potatoes following package directions for 12 servings. Combine the onions with the potatoes.
5. Place a layer of noodles over the bottom of the baking dish. Cover with a layer of potatoes, sprinkle with cheese and pats of butter. Repeat ending with noodles sprinkling top with cheese and butter. Bake at 350 degrees F (175 degrees C) for 1 hour. ENJOY!
Makes 12 servings
